Woke up early to a dreary sunday morning today, and decided to make something special for brunch. I'd originally wanted to make Anthony Bourdain/Pepin's recipe for a basic omelette, but as I had only one egg and insufficient patience to plough through the recipe (it was hard! it had many steps and many warnings!), I made my own variation instead. LOLOL.

This was the result:


Turned out pretty good! The zucchini and carrots gave a nice balance to the potatoes, which were saltier and crumbly. Fresh carrots was a good idea, so sweet! Pretty much stir-fried the mix with garlic, spring onions, tumeric, salt and pepper. I didn't think it would come out so good. But yum =) 


1. Chop a decent amount of zucchini, carrot, and potato into small cubes. I used about 1 cup each of potatoes, zucchini, and carrots.
2. Cook the potatoes separately, either by a quick microwave on high for 5 minutes, or boiling in water.
3. Mince some garlic and spring onions. If you're doing this for yourself, 1 clove of garlic and 1 stalk of spring onion should be sufficient.
4. Crack an egg into a bowl (you can use two if you like). Add a dash of water, salt, and pepper. Beat lightly with a fork.
5. Melt about 1 tablespoon of butter on pan. Can add a dash of olive oil if you like.
6. When butter has melted, throw in the garlic and spring onions and toss around for a bit until fragrant.
7. Throw in the potatoes and fry for a little until somewhat brown. Thrown in the zucchini and carrots. Add a dash of tumeric powder, salt, and pepper to taste. Stir-fry the mix until the zucchini/carrot looks mostly cooked.
8. Move the vegetables to the side and pour in the egg to one side of the pan. Wait until the egg solidifies a little, and use the spatula to break it up
9. Quickly mix the whole thing a little, and when the egg is cooked, turn off the fire, and voila =)
